What I Eat in a Day with a Plant-Based Diet

Eating plant-based doesn’t mean that I only eat kale, but I wouldn’t say that I don’t include it in my diet. Instead, I view eating plant-based as enjoying fresh and colorful foods. To show you what I mean, I tracked everything I ate in one day this past week.

Let’s start from the beginning, at 7:30 am on Wednesday…

When I start working remotely, I also have breakfast. This morning, I made an egg sandwich on oat nut bread (I always add hot sauce for flavor). I enjoyed the sandwich with coffee and some lemon water.

By 10:30 am, I felt in the mood for a snack. I grabbed a Peanut Butter Banana Clif Bar (I am always fully stocked on these). It paired well with my second cup of coffee.

Around noon, I went out to lunch at Bona Fide Juicery with a friend. It’s a super cute local spot in Green Bay. The açaí smoothie bowl I got was amazing, and I highly recommend trying it if you’re in the area. Typically, I make something at home, but sometimes I want to treat myself.

When 3:30 pm hit, I had some more snacks. This included carrots and some homemade applesauce. I try to keep pre-chopped veggies in my fridge. This makes it easy to reach for healthy options.

Around 6:00 pm, I made dinner. My entree included Banza noodles, broccoli, cauliflower, and some zesty Italian dressing. The cool thing about Banza noodles is that they are made from chickpeas, so they have more protein than just regular noodles. This is great if you don’t eat meat like me.

Later in the evening, I had some tea with honey while watching TV. I also had a few Dove chocolates that I got for Easter; they are one of my favorite treats.

It may go without saying but, I don’t eat “clean” every day. Somedays, I go out to eat and get greasy sweet potato fries. Other days, I enjoy snacks that aren’t just fruits and veggies. But I believe that this blog post captures a pretty average day for me (give or take eating out).

Overall, I try to make food choices that make me feel good and give me energy. It helps to find whatever balance works for your needs and your tastes!
